We talk a lot about eating healthy, but I always love a good homemade cake recipe. Plank editor Mandy recently traveled back to her hometown and returned with an favorite old recipe for a Southern style pound cake with caramel icing … yum! So I asked her to share that here!
“My aunt used to make this cake when I was a kid, and it was always a favorite. I hadn’t had it in years, but she surprised me with one while I was home. And, I finally got her to share the recipe! What out, there’s a lot of butter in this … but it’s so worth it!” – Mandy
Cream Cheese Pound Cake with Caramel Icing
Ingredients
- 2 sticks of butter (unsalted)
- 1 stick of margarine
- 8 oz. package of cream cheese
- 6 eggs
- 3 cups sugar
- 3 cups cake flour
- 1/2 tsp. baking powder
- 2 tsp. vanilla extract
- For Icing:
- 1 stick of butter
- 1 cup light brown sugar
- 1/4 cup evaporated milk
- 1 1/2 cup powdered sugar
Instructions
- Let butter, margarine, cream cheese & eggs sit out until room temperature
- Cream 2 sticks of butter, margarine & cream cheese together.
- Add sugar (1 cup at a time)
- Add eggs (one at a time)
- Add cake flour and baking powder (1 cup at a time)
- Add vanilla extract
- Spray a bundt pan with Pam or Baker's Joy non-stick spray then add cake mix
- Bake at 325 for 1 hour and 12 min.
- For Icing:
- Cook butter, brown sugar and milk. Boil for 1 minute
- Cool to lukewarm, add powered sugar and beat until smooth

I made this yesterday for dessert but did a salted caramel icing which changed the taste a bit and put a scoop of vanilla ice cream

What would happen if you substitute more butter for the margarine? I don’t buy margarine.
