Rainbow Roasted Vegetables

Ingredients

  • - a mix of fresh, raw vegetables (examples include sweet potatoes, butternut squash, broccoli, red pepper, rainbow carrots, brussel sprouts and red onion)
  • - salt
  • - pepper
  • - olive oil

Instructions

  1. Cut veggies into small cubes or pieces
  2. Spray or lightly coat cooking sheet with olive oil (I cover mine with aluminum foil or parchment paper first)
  3. Spread your veggies out (the sheet can be really full, but veggies shouldn’t be piled into of each other)
  4. Drizzle olive oil on top (not a lot)
  5. Sprinkle salt and pepper
  6. Vigorously shake the sheet so your oil and salt and pepper are evenly spread
  7. Roast at 375 for 45-60 minutes or until desired tenderness is reached (check progress after 25-30 minutes, shake sheet or rearrange veggies so they cook evenly)
