Yams Delight
Ingredients
- 2 cups pretzels sticks
- 3 sticks of butter
- 8 oz cream cheese (room temperature)
- 2, 8 oz. containers of Cool Whip
- 2 cups sugar
- 1 egg
- 3 tbs. of flour or corn starch
- 1 tbs. vanilla
- 3 cups cooked sweet potatoes (I use canned)
Instructions
- Crush pretzel sticks into a find dust (I use a blender or Nutribullet for this)
- In a 3 qt baking dish, combine pretzels and two sticks of butter and bake for 12-15 (this will melt the butter and, when spread evenly, make the bottom crust)
- While that's in the oven, combine your cooked sweet potatoes, egg, 1 cup of sugar, cornstarch/flour and vanilla in a pot, stir and cook over low heat until smooth and thick. You'll need to mash your potatoes during this.
- Let your crust and your sweet potato mixture cool
- While those are cooling, combine your cream cheese, one container of cool whip and 1 cup of sugar and stir well (using a mixer makes this easier)
- Once the crust is completely cooled, spread your cream cheese mixture over the crust.
- Then layer on top of that your sweet potato mixture
- Finally, top with a layer of cool whip (using your second container)
- Refrigerate until ready to serve
