Whatever you'd like to stuff the chicken with: Shallots, Mushrooms (chopped), Green Olives (sliced), ham or thinly sliced meat, toasted pine nuts and/or cheese
Please note that this chicken can be stuffed with anything, really, but all things for the stuffing need to be cooked prior to being stuff.
Combine chicken stock and panko crumbs with basil and anything else you're using to stuff (some things that work well include olives, toasted pine nuts, meat (cooked), shallots (cooked), mushrooms (cooked) and/or cheese)
With your chicken breast laying flat and using a sharp knife, cut a pocket into the breast on the thicker side of each breast (see video).
Stuff the breast with your mixture
In a saute pan, heat a little olive oil to coat the pan, add butter, then place the chicken and brown, skin side down, and for approximately 3 minutes.
Remove chicken from sauce pan and place in baking pan.
