Salad with lemon-basil goat cheese

Ingredients

  • 6-8 ounces of your favorite goat cheese
  • 1 teaspoon of grated lemon zest
  • 1/2 teaspoon finely minced garlic
  • 2 tablespoons olive oil
  • Salt and pepper
  • 6-8 cups arugula or mixed baby greens (washed and dried)
  • 4-6 fresh basil leaves
  • 2 tablespoons balsamic vinegar

Instructions

  1. Using either a mold or your hands, gently form the goat cheese into four discs (approx. 2 inches by 1/3-inch thick).
  2. In a small bowl, mix lemon zest, garlic, oil and a pinch of salt.
  3. Place rounds of cheese on a plate, season with freshly ground pepper.
  4. Evenly pour the mixture over them.
  5. Cover plate and refrigerate until ready to serve.
  6. To make dressing, in a small bowl, whisk together balsamic vinegar and oil, season with salt and pepper.
  7. Place arugula or greens in a bowl and add the desired amount of dressing; mix well.
  8. Top each serving with a disc of goat cheese, including the mixture they marinated in.
  9. Sliver basil and sprinkle over the goat cheese.
