Cauliflower Mash

Ingredients

  • 12-16 oz. riced cauliflower (fresh or frozen, though I prefer frozen)
  • 1/2 cup Cashew milk
  • 1 tablespoon of Ghee (or butter)
  • Salt
  • Pepper
  • Other spices as desired (I love Trader Joe's Everything But The Bagel spice)

Instructions

  1. Steam the cauliflower (if you're using frozen, you can just put it in a bowl in the microwave and heat for 4-6 minutes ... which will leave it with a nice amount of moisture)
  2. Combine steamed cauliflower, cashew milk, ghee and spices in food processor (or I use my Nutribullet) and blend until smooth
  3. Please note - you can add more or less cashew milk to obtain the consistency desired
