Butternut Squash Hummus
Ingredients
- 2 cups butternut squash, cubed
- 2 tablespoons tahini
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 garlic clove
- 1/4 cup olive oil
- 1/2 teaspoon sea salt
Instructions
- steam butternut squash until tender
- combine all ingredients in a food processor (or I use my NutriBullet)
- chill before serving
- you can top with paprika and roasted pepitas
