Butternut Squash Hummus

Ingredients

  • 2 cups butternut squash, cubed
  • 2 tablespoons tahini
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/4 cup olive oil
  • 1/2 teaspoon sea salt

Instructions

  1. steam butternut squash until tender
  2. combine all ingredients in a food processor (or I use my NutriBullet)
  3. chill before serving
  4. you can top with paprika and roasted pepitas
