Bread pudding

Ingredients

  • 4 cups bread pieces (tear any kind of bread into crouton size pieces)
  • 1 large Granny Smith apple (cubed with skin on)
  • 1 cup cranberries (frozen)
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • Scant nutmeg
  • 1 cup milk
  • 1 cup heavy cream
  • 6 large eggs
  • Pinch of salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In a saute pan, add sugar, cinnamon and nutmeg to fruit and cook on medium heat until sugar is dissolved and cranberries begin to pop.
  3. Remove fruit from heat and let cool.
  4. While fruit is cooling, whisk together eggs and cream (if you are not using fruit, add sugar to this mixture; you can also use chocolate chunks instead of fruit)
  5. Add a pinch of salt
  6. In a large bowl, add bread and fruit, then dump the combined liquid/custard over the bread
  7. In a buttered pan, bake on 350 for 30 minutes (use a knife to check, knife should slide out clean)
  8. *Optional: late in the cooking, you can sprinkle the top with sugar and cinnamon.

  2. I am a southern , cajun, country cook. I have done a good bit of bread pudding in my time. The fruit is a different twist and I am going to try this one out. Thanks for the recipe .
