Blueberry Bread
Ingredients
- 5 cups flour
- 1 1/2 cup sugar
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- Juice of 1 lemon
- 3/4 cup butter
- 1 1/2 cup chopped nuts
- 1 tsp. grated lemon peel
- 4 eggs
- 2 cups milk
- 2 tsp. vanilla
- 3 cups frozen blueberries
Instructions
- Combine flour, sugar, baking powder, salt and cinnamon in a large bowl.
- Cut in butter until the mixture has the appearance of fine crumbs.
- Stir in walnuts and lemon peel.
- Beat eggs lightly with a fork in a small bowl.
- Stir in milk, vanilla and lemon juice. Mix well.
- Blend into flour mixture just until moist.
- Gently stir in blueberries.
- Spoon into pans (pans should be greased and floured)
- Bake at 350 until toothpick comes out clean. (80-90 minutes)
- Cool on wire racks for 10 minutes.
- Remove from pan.
