Blueberry Bread

Blueberry Bread

Ingredients

  • 5 cups flour
  • 1 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • Juice of 1 lemon
  • 3/4 cup butter
  • 1 1/2 cup chopped nuts
  • 1 tsp. grated lemon peel
  • 4 eggs
  • 2 cups milk
  • 2 tsp. vanilla
  • 3 cups frozen blueberries

Instructions

  1. Combine flour, sugar, baking powder, salt and cinnamon in a large bowl.
  2. Cut in butter until the mixture has the appearance of fine crumbs.
  3. Stir in walnuts and lemon peel.
  4. Beat eggs lightly with a fork in a small bowl.
  5. Stir in milk, vanilla and lemon juice. Mix well.
  6. Blend into flour mixture just until moist.
  7. Gently stir in blueberries.
  8. Spoon into pans (pans should be greased and floured)
  9. Bake at 350 until toothpick comes out clean. (80-90 minutes)
  10. Cool on wire racks for 10 minutes.
  11. Remove from pan.
