Chef for a Day: Mary Beth is in the Kitchen

Many moons ago, maybe 15 or more years, my husband, our kids and I would go to our local steak house for special occasions.  The general manager, Patrick Kirchen, was always so kind and professional … and he always made us feel so welcome. Over the years, we became good friends with Patrick and his wife, Stephanie, and it was always a treat to see them around town.  

In 2013, Patrick and Stephanie opened a beautiful restuarant of their own in South Pasadena. They took all this incredible knowledge and brought in an amazing executive chef, Lalo Sanchez … and together they created Crossings. It quickly became one of my favorite restaurants, and with their ever changing, farm to table menu I have had the most amazing meals there. In fact, we had such faith in Patrick that we booked my husband’s work Christmas party there – before the restaurant even opened.

As most of you know, I love to cook, and I’ve always thought it would be so cool to have my own restaurant or to be a sous chef. While I’m not quite ready to dive into a full-time restaurant venture, I did want to see what it’s all about … so I asked Patrick if I could drop into Crossings. He and Lalo not only opened their doors to me, but also put me to work … and let us get the whole experience on camera.

So, come along with me for my day in the kitchen!

    What an interesting video. I loved watching you learn how to make that oxtail pasta sauce. I really enjoy cooking and found this video very informative. Thank you for posting this for us and wish Patrick and Stephanie the best of luck with their restaurant.

    This was fun! I enjoyed it and even learned a few good tips! But I must say girl get that cow out of the freezer and cook him up!! Besides I’m sure you didn’t go out to the field look the cow in the eye and say come with me!! That is one of my all time favorite lines!!😂😂when I don’t have time to fire up the grill, I cook my steak in my oven on broil, on my broiler pan, 7-8 minutes each side, delicious!!!

    This vid makes me appreciate my cooks/chefs SO much!! I’m happy there are people with that interest and talent! Also, I’m a goof, and when I’ve had ox tail in the past I had NO idea it was beef!😝
    I also loved the building! My house was built in 1908 as well. They rarely make things this sturdy anymore!
    Thanks for being adventurous and unabashedly trying new things, even with us watching. Pretty awesome.

    Off topic I know, but thank you for recommending “Whole30”! I accidentally ended up buying the book and rather than waste the money I spent on it, I actually read the book and took the challenge. I also coerced my husband into trying this new lifestyle as well. Today is the end of the 30 days. I have lost 11.5 lbs and a total of 5 inches but most impressive is the fact that my aches and pains are essentially gone! My husband went from hating this program, to loving it so much he wants to continue eating this way. He lost 20 lbs and lowered his resting heart rate from 63 to 46! So thank you so much for sharing this book with your readers!!
