Cupcakes
Ingredients
- 1 cup (2 sticks) unsalted butter
- 3 large eggs, at room temperature
- 1 cup sugar
- 1 cup sifted all-purpose flour
Instructions
- Preheat the over to 350 degrees. Lightly grease your pan or use cupcake papers.
- Melt the butter in a saucepan over low heat.
- Beat the eggs and sugar in a medium-size mixing bowl with an electric mixer on high speed until the mixture is thick and pale, about 4 minutes
- Resift the flour over the egg mixture and fold it in gently with a rubber spatula
- When the flour is almost but not completely incorporate, slowly fold in the melted butter with gentle strokes.
- Pour the batter into the cupcake pans.
- Bake the cupcakes on the center oven rack for 15-20 minutes. (but start checking for clear toothpick at 10 minutes)
