Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 3 large eggs, at room temperature
  • 1 cup sugar
  • 1 cup sifted all-purpose flour

Instructions

  1. Preheat the over to 350 degrees. Lightly grease your pan or use cupcake papers.
  2. Melt the butter in a saucepan over low heat.
  3. Beat the eggs and sugar in a medium-size mixing bowl with an electric mixer on high speed until the mixture is thick and pale, about 4 minutes
  4. Resift the flour over the egg mixture and fold it in gently with a rubber spatula
  5. When the flour is almost but not completely incorporate, slowly fold in the melted butter with gentle strokes.
  6. Pour the batter into the cupcake pans.
  7. Bake the cupcakes on the center oven rack for 15-20 minutes. (but start checking for clear toothpick at 10 minutes)
