Easy Baked Eggs

Yield: Serves 8

Easy Baked Eggs


  • 2 tbsp. butter
  • 6 green onions, thinly sliced
  • 12 eggs, beaten
  • 1 1/3 cups milk
  • 3/4 tsp. seasoned salt
  • 1 1/2 cups diced ham
  • 3 cups shredded cheddar cheese


  1. Melt butter in a skillet over medium-low heat.
  2. Saute onions in butter until soft.
  3. In a large mixing bowl, beat eggs.
  4. Add milk, salt, ham and all but 1/2 cup of the cheese.
  5. Pour egg mixture into a greased oven proof 2-quart casserole dish.
  6. Bake uncovered at 350 degrees for 30 minutes or until mixture is set.
  7. Remove from oven and sprinkle with cheese.
  8. Continue to bake until cheese melts.


For variety, try substituting crumbled, cooked bacon for the ham and add one cup of sautéed mushrooms to the mixture. Other varieties of cheese may be used as well ... swiss, Monterey Jack, or some combination of cheeses.
