Cranberry Orange Bread

Ingredients

  • 4 cups flour
  • 2 cups sugar
  • 3 tsp baking powder
  • 2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup shortening
  • 2 eggs (beaten)
  • 1 1/2 cup orange juice
  • 2 tsp grated orange peel
  • 1 cup nuts
  • 2 cup chopped cranberries

Instructions

  1. Sift dry ingredients into a large bowl.
  2. Cut in shortening.
  3. Combine eggs, orange juice and peel
  4. Add to dry ingredients and mix just until moist.
  5. Fold in nuts and berries.
  6. Turn into pans. (greased & floured)
  7. Bake at 350 degrees for 1 hour (or until toothpick comes out clean)
  8. Cool on wire rack before removing from pans.
  9. Wrap and store overnight to develop flavor.
