Springtime entertaining

With Spring in full swing here in Southern California, and Easter just a few days away, I’ve been thinking about one of my favorite things — entertaining. As I’ve mentioned before, there are few things I enjoy more than hosting friends and family. Over the years I’ve experimented with all kinds of dishes, and along the way I’ve discovered a few favorites. One of my “go to” recipes for dinner parties is my lamb chops. Now I know that lamb can sound intimidating for some, but this recipe is super easy and is guaranteed to impress!

Butterflied Leg of Lamb

Yield: 8 servings

Ingredients

  • 1 cup dry red wine
  • 3/4 cup soy sauce
  • 4 large cloves garlic, crushed
  • 1/2 cup chopped fresh mint
  • 2 tbsp. slightly bruised fresh rosemary or 1 tbsp dried
  • 1 tbsp. coarsely ground black pepper
  • 1 butterflied leg of lamb (1 rack for every 2 people, see note)
  • *Note:
  • I usually do 2-3 chops for lighter eaters and 4 chops for heavier eaters. There are 6-8 chops on a rack so I will usually get 2 racks for every 4 people I'm serving.

Instructions

  1. Combine the wine, soy sauce, garlic, mint, rosemary and pepper and pour over the lamb in a large ziplock baggie. (Use a bowl for legs and a bag for chops) Refrigerate for 6 hours, turning a few times.
  2. Prepare grill for grilling
  3. Drain the meat but reserve the marinade.
  4. Grill the lamb on a hot grill until crispy on the outside and still pink on the inside (20 minutes or so on each side), basting frequently with the marinade. Check the lamb for doneness frequently after 30 minutes of grilling.

I like to serve this with mashed potatoes and sweet potatoes — I use butter and milk in both and add a little cinnamon and a pinch of salt to the sweet potato.

  2. That looks like a great marinate and lamb is my absolute favorite for grilling! I can’t wait to try it. My rosemary wintered over this year and I already have enough to pull some out of the garden. It must be a sign that it’s time to make some chops!

  3. Hi Mary Beth, I am a relatively new and novice “cook”. After many years of eating out and ordering in, I decided to save money and eat healthier by cooking my own meals. I would say I am an average cook now, with a few specialties. Some in my family love Pork Chops, and I have been looking for a substitute for it. Your Lamb chops look very good. I will try this recipe so wish me luck!! I also love sweet potatoes and mashed ones as well. I like mixing the two. Have you ever made a dish mixing the two potatoes up?
