I’ve got a craving for some posole

Several years ago, I was invited to dinner by this sweet, young couple. When I arrived, I was amazed at how together and calm the wife was, despite the fact that they had small children. Putting together a dinner party can be stressful … doing so with young kids can sometimes seem impossible. But she served this delicious chicken posole soup and I was so impressed. Since then, I make this for my husband and myself all the time … and even crave it every few weeks.

It’s relatively easy to make, and is a spicy, delicious change of pace! Don’t be thrown off by all of the spices … I was intimidated at first, but now I go full throttle. Oh, and I’ve even tried it vegetarian style, just leave out the chicken and substitute vegetable broth.

Chicken Posole

Chicken Posole

Ingredients

  • 1 1/2 quarts chicken broth
  • 3 boneless chicken breasts, skinned
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp. black pepper
  • 1 tbsp. mild chili powder
  • 1 tsp. cumin
  • 1 tsp. Mexican oregano
  • 1 large yellow bell pepper, julienne
  • 1 large red bell pepper, julienne
  • 1 lb. can white hominy
  • 1 bunch cilantro, chopped
  • 1/2 tsp. chipotle paste (or you can use 1 small, dried chipotle chili, seeded)
  • Toppings: salsa, chopped radishes, sliced cabbage

Instructions

  1. Bring broth to a boil and add chicken breasts
  2. Simmer 20 minutes or until done
  3. Remove chicken from broth, let cool then chop coarsely
  4. Add the following to the broth: onion, garlic, black pepper, chili powder, cumin and oregano.
  5. Bring broth mixture to a boil and cook 20 minutes.
  6. Add yellow and red peppers, then cook an additional 10 minutes.
  7. Add hominy (including liquid) to soup pot and bring to a boil.
  8. Add cilantro, cooked chicken and chipotle paste.
  9. Stir and season to taste
  10. Serve with salsa, chopped radishes and sliced cabbage.
  11. *For a spicier soup, use additional hot chili powder and extra black pepper.

    I am making this again tonight! Everyone loved it last time, including my kids – – win for mom! But mine does not turn out red.. Is it because I use a Chipotle pepper from the can rather than the paste?

    What is hominy?

      It’s corn that has been treated with lye (totally safe) It’s delicious, and eaten often in Hispanic food. You can find it in cans in the Mexican food section of your grocery store.

  7. I’ve wanted a good recipe for this soup for quite a long time. I can’t wait to try it. I’m going to roast my garlic and probably add a little more because we love garlic. I also always squeeze lemon juice and sometimes the zest into the soup near the end. It wakes up and brightens the flavors. Thank you for sharing!

  12. Oh that soup looks divine!! I love trying out new soup recipes and freezing the leftovers for later. Not a fan of cilantro, so maybe I could sub another herb like regular parsley? I’ve never used hominy in a soup recipe before – but I love corn and grits so it sounds like a perfect addition. I look forward to making this! Thanks for sharing the recipe with us 🙂
