Comfort Food: Healthy Sweet Potato Chili

What a week! Between the this crazy election season coming to a close and my hectic schedule in preparation for Sunday’s benefit performance, things have been a bit chaotic. So this week, I’m sharing a little comfort … in the form of comfort food!

Last month I shared with you my attempt at the Whole30. Well, 30 days have come and gone, but I feel so great I’m sticking with it. In addition to feeling good, the Whole30 has introduced me to so many fabulous recipes. One of my favorites is this Slow Cooker Sweet Potato Chili. It’s super easy to make and so yummy … oh and it’s pretty healthy too! I use ground turkey, but you can use beef. Give it a shot, and let me know what you think!

Comfort Food: Healthy Sweet Potato Chili

Ingredients

  • 1 cup diced yellow onion
  • 1 lb ground grassfed beef (or ground turkey)
  • 1 tsp sea salt
  • 1 yellow bell pepper, diced
  • 2 carrots, sliced
  • 3 sweet potatoes, peeled and cubed (about 5 cups)
  • 2 cloves garlic, minced
  • 1 (28oz) can diced tomatoes (include liquid)
  • 1 (28oz) can tomato sauce
  • 1 cup bone broth (beef or chicken)
  • 2-3 Tbsp chili powder
  • 1 Tbsp of all-purpose herb seasoning
  • 1 bay leaf
  • 3/4 tsp sea salt
  • 2 small zucchini, cubed (about 2 cups)

Instructions

  1. In a large skillet over medium-high heat, sauté the onion in one tablespoon of olive oil for 1-2 minutes, until fragrant. Add the ground beef (or turkey) and sprinkle with 1 tsp sea salt. Cook meat until cooked through.
  2. Add the meat mixture to a 6-quart slow cooker. Then add all of the remaining ingredients, except the zucchini. Stir well to combine.
  3. Cover and cook on low for 7-8 hours. Be sure to add the cubed zucchini during the last hour of cook time.
  4. When ready, remove bay leaf and re-season to taste with additional chili powder and salt. Top with diced avocado and sliced green onions.

  1. This chili is delicious. I was looking for a recipe I could eat with having Crohn’s. The first time I made it I LOVED it but I didn’t save the recipe! This morning I was almost in tears because I couldn’t find it again on the internet. I made the chili from memory and just found the actual recipe again (which I have now printed!). I did pretty well remembering the ingredients and hope it’s as delicious as the first time.

  2. I made the chili tonight and it was fantastic! I added some fresh cilantro at the end along with the avocado. It’s nice to find a chili recipe that doesn’t have beans which I can’t eat because if Crohn’s disease. Thanks for posting Mary Beth!
