Celebrating 30 years with Banana Cake

My son, Danny, has never liked sweets, including cake (how did that happen?). So this past weekend, as we celebrated his 30th birthday, I made this banana cake recipe.

I make this in round cake pans, and this year I doubled the recipe and did four layers, with frosting and sliced bananas in between each layer. Then, I chopped walnuts and, using my hands, I covered the side of the cake.

The results was a huge success – a beautiful, mile-high presentation that was so yummy! 

Banana Cake with Cream Cheese Frosting

Yield: 12-18 servings

Banana Cake with Cream Cheese Frosting

Ingredients

  • 2 1/4 cups sifted cake flour
  • 5 tbsp. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup plus 2 tbsp. buttermilk (at room temperature)
  • 3/4 cups mashed banana (about 2 very ripe bananas, skin should be brown)
  • 10 tbsp. (1 1/4 stick) unsalted butter, at room temperature
  • 6 tbsp. vegetable oil
  • 3/4 cup (lightly packed) light brown sugar
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 3 large eggs, at room temperature
  • For Frosting ...
  • 10 oz. cream cheese (at room temperature)
  • 3/4 cup confectioner's sugar
  • 2 tbsp. unsalted butter (at room temperature)
  • 1/4 cup plus 1 tbsp. heavy whipping cream (at room temperature)
  • Chopped walnuts (optional)

Instructions

  1. Preheat oven to 350 F. Grease a 13 x 9-inch baking pan lightly with butter or vegetable oil.
  2. Sift both flours, the baking soda and salt together into a small bowl and set aside.
  3. In a second small bowl, stir the buttermilk into the mashed banana and set aside.
  4. Cream the butter, oil, both sugars and vanilla in a medium-size mixing bowl with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape the bowl with a rubber spatula.
  5. Add the eggs one at a time to the butter mixture and mix on medium speed after each addition until blended, about 10 seconds. Scrape the bowl each time.
  6. Add one-third of the dry ingredients with the mixer on low speed and mix for 8 seconds. Scrape the bowl. Add half the banana mixture, mix 10 seconds and scrape the bowl. Add the rest of the dry ingredients and the rest of the banana mixture and mix for 10 seconds. Scrape the bowl and stir the batter several times by hand to mix thoroughly.
  7. Pour the batter into the prepared pan. Bake on the center oven rack until the top is golden, springs back to the touch and a tester inserted in the center comes out dry, 30-35 minutes. Place the cake on a rack to cool completely.
  8. Eat as is or frost with Cream Cheese frosting.
  9. For frosting, cream the cream cheese, sugar and butter in a medium-size mixing bowl with an electric mixer on medium speed until light and fluffy, 3-4 minutes. Scrape the bottom and side of the bowl with a rubber spatula.

    Although I am not a baker , I am super excited Plank is back! I also wanted to thank Mandy for asking all to join My Fitness. It is the first time I have stuck to a program and had success. Although my weight loss stopped at 14 lbs I suddenly gained 2 lbs. I am not upset but back at a plan that works for me.

    Walnuts haven’t seen the light of day in our house for 15 years as my son is anaphylactic to nuts and like yours, he is not partial to sweets.

  14. The cake recipe and the cake itself look wonderful. Will try it for a special occasion with friends. Unfortunately for myself there is just a bit too much sugar for me to eat it and I hate to say recipes never taste the same or as good with artificial sweetner. I love baking and cooking though so this is a must try! Thank you for frequently sharing so many great recipes in your blog. I always enjoy making many of them!
