A Special Meal for My Special Man

With Father’s Day approaching, I’ve been thinking about doing something special for my man. In some ways, he often gets the short end of the stick. For holidays that we share – like Christmas or our anniversary – he always manages to buy the perfect gift. Then again, I’m pretty easy – a little bobble, a gift certificate to a nursery or a massage will always make me happy. But buying for him is tougher! One more sweater?

As I’ve shared in previous posts, I make dinner at home most week nights – but it’s usually one of my regular “go to” meals. My husband and I enjoy going out to dinner together on the weekends, but for special occasions, I like to branch out and do a really special, recipe meal. He is always so appreciative of the care I took to make something different and I’m so proud of my accomplishment. I’ve still got more than a week before Father’s Day, but with my crazy work schedule as of late, I knew I needed to get an early start in planning his special meal. This chicken piccata over freshly made pasta is just the answer (Tip: I use this pasta machine from Williams-Sonoma)! It looks like you SLAVED over the stove, but it’s very easy (and delicious too).

Because I’ve got all of these amazing, fresh vegetables and fruit growing in the backyard, I’m going to pair that with a delicious summer salad and a warm, fruit bread pudding. I know my husband will love this, and I bet the special man in your life will too. Or give these a try for your own enjoyment – it’s a great way to get your creative juices flowing and have fun trying something new!
