Dinner & A Drink? Here’s A Great Pair!

Every year my family takes a ski trip, and one of the things we always do while we’re there is have dinner at this one restaurant. Years ago I discovered their amazing blackened tofu stir-fry and now it’s what I get every time.

It’s so delicious that I even sought out a similar recipe and now I make it all the time (it’s super easy). The restaurant also serves the BEST mojito and the two go together perfectly, so I usually serve that with the stir-fry.

Chicken Basque? Seconds Please!

blog68_chicken1Yesterday, as I was sharing this chicken basque recipe with my good friend, Kristian Alfonso, for her weekly “bring the family together” meal, I was reminded of how delicious it is. Since so many of you have commented about how much you love when I post recipes, I thought I couldn’t leave out this favorite.

This delicious chicken dish is one that everyone loves, and it’s great because it can be prepared ahead of time. Even if you think these are not your favorite ingredients, trust me … the way they infuse is really so yummy.  Give it a try! It’s great with rice or potatoes, over pasta or just on its own.  My mouth is watering writing about it …

I’ve got a craving for some posole

Several years ago, I was invited to dinner by this sweet, young couple. When I arrived, I was amazed at how together and calm the wife was, despite the fact that they had small children. Putting together a dinner party can be stressful … doing so with young kids can sometimes seem impossible. But she served this delicious chicken posole soup and I was so impressed. Since then, I make this for my husband and myself all the time … and even crave it every few weeks.

Making Our Own Holiday Traditions

I love holidays … pretty much all of them! When my kids were growing up I would always make a HUGE Christmas Eve dinner with my friend, Carrie, and we would invite ALL of our family. It was always a big sit down dinner with Christmas china the two of us had been collecting.  After dinner, my family would head back to their respective homes, which are about an hour away from me, while most of Carrie’s family would stay over.  When I would call the next day, Carrie’s family would be making a huge breakfast and hanging together – and I must say I was always a little envious! 

Setting the table for a happier holiday

Anyone who knows me knows I like to entertain.  I love to go the extra mile – decorate, make homemade everything, etc. But frankly, it’s a big deal, it does take time and it’s not for everyone.

After my return from New York, where I spent Thanksgiving, I caught up with several of my friends and family; and many of them had the same comments. “It’s just too much work,” or  “I didn’t enjoy it because I had to work so hard.”  There’s going to the market one day, a whole day of cooking another day, and then cleanup. Then you’re pooped and have to get right back to work. It’s easy to understand why so many want to say forget it.
