Flaky Pie Crust
Ingredients
- 2 1/2 cups all purpose flour
- 1 1/2 tbsp. sugar
- 1 1/4 tsp. salt
- 2/3 cup solid vegetable shortening, frozen, then but into 1/2-inch pieces
- 1/2 cup (1 stick) chilled, unsalted butter, cut into 1/2-inch pieces
- 6 tbsp. ice water
- 2 tsp. apple cider vinegar
Instructions
- Blend flour, sugar and salt in processor
- Add shortening and butter (cut in using on/off turns until mixture resembles course meal)
- Transfer to bowl
- Mix ice water and vinegar in a small bowl
- Pour water/vinegar mixture over flour mixture
- Stir with fork until moist clumps form (add more ice water if dough is dry)
- Gather dough into 2 balls
- Flatten each disk
- Wrap each in plastic
- Chill 30 minutes
Notes
This can be prepared ahead of time and refrigerated up to 2 days or frozen up to 1 month. If frozen, thaw overnight in refrigerator. Soften lightly at room temperature before using.
