Flaky Pie Crust

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 1/2 tbsp. sugar
  • 1 1/4 tsp. salt
  • 2/3 cup solid vegetable shortening, frozen, then but into 1/2-inch pieces
  • 1/2 cup (1 stick) chilled, unsalted butter, cut into 1/2-inch pieces
  • 6 tbsp. ice water
  • 2 tsp. apple cider vinegar

Instructions

  1. Blend flour, sugar and salt in processor
  2. Add shortening and butter (cut in using on/off turns until mixture resembles course meal)
  3. Transfer to bowl
  4. Mix ice water and vinegar in a small bowl
  5. Pour water/vinegar mixture over flour mixture
  6. Stir with fork until moist clumps form (add more ice water if dough is dry)
  7. Gather dough into 2 balls
  8. Flatten each disk
  9. Wrap each in plastic
  10. Chill 30 minutes

Notes

This can be prepared ahead of time and refrigerated up to 2 days or frozen up to 1 month. If frozen, thaw overnight in refrigerator. Soften lightly at room temperature before using.
