Rainbow Roasted Vegetables
Ingredients
- - a mix of fresh, raw vegetables (examples include sweet potatoes, butternut squash, broccoli, red pepper, rainbow carrots, brussel sprouts and red onion)
- - salt
- - pepper
- - olive oil
Instructions
- Cut veggies into small cubes or pieces
- Spray or lightly coat cooking sheet with olive oil (I cover mine with aluminum foil or parchment paper first)
- Spread your veggies out (the sheet can be really full, but veggies shouldn’t be piled into of each other)
- Drizzle olive oil on top (not a lot)
- Sprinkle salt and pepper
- Vigorously shake the sheet so your oil and salt and pepper are evenly spread
- Roast at 375 for 45-60 minutes or until desired tenderness is reached (check progress after 25-30 minutes, shake sheet or rearrange veggies so they cook evenly)
